Southwest Potato Wedges

Ingredients

4                          medium sweet potatoes cut into wedges
1 tablespoon           olive oil
1/4 teaspoon          pepper
1/2 teaspoon          paprika
1/8 teaspoon          salt

Preparation
  1. Place potatoes in bowl of water and soak for 15 minutes.
  2. Preheat oven to 425 degrees and spray a nonstick baking sheet with cooking spray.
  3. Drain potatoes and pat dry with paper towels.
  4. Put potatoes in large bowl and sprinkle with remaining ingredients and toss gently.
  5. Arrange on prepared baking sheet and bake for 20 minutes.
  6. Turn potatoes and bake another 20 minutes or until golden brown
