Stuffed Pea Pods

Ingredients

32                               snow pea pods
3                                 ounces fat free cream cheese
2 tablespoons                chives
4 ounces                      smoked salmon, flaked

Preparation
  1. Rinse pea pods and snap off stems.
  2. If pea pods are not crisp, soak in ice water for 30 minutes.
  3. With a small knife, open pea pods along straight side.
  4. In bowl, combine chives and cream cheese.
  5. Add salmon and mix gently. Spoon about 1 teaspoon mixture into each pea pod.
  6. Cover and refrigerate until ready to serve.
