Breakfast Burrito

                                       

                                                

1 large flour tortilla
1/4 cup  egg substitute
1/2 cup chopped tomato
2    tbs. chopped onion
1/4 cup  canned corn and liquid
1/4 cup salsa
   
   

          

 

 

 

 

 

  1. In a small skillet, place the chopped tomato, onion, corn and liquid.
  2.  Cook over medium heat until soft (add a little water, if needed).
  3. Add the egg substitute and scramble with vegetables until cooked through.
  4.  Spread the mixture onto the tortilla.
  5. Add the salsa, and roll up.
  6. Serve immediately
