Zucchini Parmesan

Ingredients:
  • 1 pound zucchini, sliced
  • 1 can chicken broth (reduced sodium broth will lower total sodium intake)
  • 1 can (6 ounces) tomato paste
  • 1 medium onion, chopped
  • 2 teaspoons dried Italian seasoning
  • 1 tablespoon garlic, crushed
  • 1/4 cup bread crumbs
  • 1/4 cup parmesan cheese

Preparation

  1. Spray casserole dish with cooking spray.
  2. Combine zucchini, chicken broth, tomato sauce, onion, herbs and garlic in casserole dish.
  3. Sprinkle with bread crumbs and cheese and bake uncovered at 350 degrees for 45 minutes.

Makes 4 servings
