Ingredients:
- 1 pound zucchini, sliced
- 1 can chicken broth (reduced sodium
broth will lower total sodium intake)
- 1 can (6 ounces) tomato paste
- 1 medium onion, chopped
- 2 teaspoons dried Italian seasoning
- 1 tablespoon garlic, crushed
- 1/4 cup bread crumbs
- 1/4 cup parmesan cheese
Preparation
- Spray casserole dish with cooking spray.
- Combine zucchini, chicken broth, tomato
sauce, onion, herbs and garlic in casserole dish.
- Sprinkle with bread crumbs and cheese and
bake uncovered at 350 degrees for 45 minutes.
