Boris' Omelet

 Serves: 1                Preparation Time: 10 mins               Cooking Time: 5 mins.



Ingredients:

Directions:

  1. In a non-stick skillet add onion and bell pepper.
  2. Cook until just soft, about 2 minutes.
  3. Set aside.
  4. Gently whisk the egg whites with a dash of low fat milk.
  5. Cook in a non-stick skillet or omelet pan;
  6. add basil and bell pepper/onion mixture. Fold over and add freshly ground pepper.
  7. Garnish with parsley
