Tasty Things
to Do With Fish
Grilled
Swordfish
makes 4 servings
INGREDIENTS:
1-1/2 to 2 pounds swordfish steaks
6 sprigs of rosemary, minced
1/3 cup olive oil
Salt and pepper to taste
- Rinse the fish with cold water and pat
dry.
- Arrange in a shallow dish.
- Pour a mixture of rosemary, olive oil,
salt and pepper over the fish.
- Marinate, covered, in the refrigerator
for 1 hour, turning occasionally.
- Grill the steaks over hot coals for 4 to
5 minutes per side or until the fish flakes easily.

Roasted Salmon
I found this in the Cooking Light little
book of Favorite Recipes and it is legal and wonderful!
Makes 4 servings
1/4 c. pineapple juice
2 Tbsp fresh lemon juice
4 (serving size) salmon fillets
2 Tbsp brown sugar substitute
4 tsp chili powder
2 tsp lemon zest
3/4 tsp ground cumin
1/2 tsp salt (I didn’t use)
1/4 tsp ground cinnamon
1. Combine pineapple juice, lemon juice and salmon fillets in a plastic bag;
seal and marinate in refrigerator 1 hour, turning occasionally. Preheat oven
to 400 degrees.
2. Remove fish from bag, discard marinade. Combine sugar and next 5
ingredients in a bowl. Press into fish; place in a baking dish coated with
cooking spray.
3. Bake at 400 degrees for 12 minutes or until fish flakes easily with a
fork. Serve with lemon slices.
Shrimp
Baguettes
Makes 4 servings
1 Baggett sliced lengthwise
2 plum tomatoes sliced
1 clove garlic minced
1 green pepper chopped
1 red pepper chopped
1 large onion sliced
1 cup nonfat cheddar cheese grated
8 medium shrimp
2 tbs chili powder, salt and pepper to taste
- Place a non stick grill pan on the grill
coat with olive oil spray non fat
- Sauté the peppers, onions garlic set
aside
- Sprinkle the shrimp with chili powder
and grill until they turn pink, set aside.
- Spray the Baggett with olive oil spray,
and grill till nice grill marks appear
- Assemble the baguettes start with sliced
tomatoes on top of baguettes
- Then add onions, peppers and garlic, add
non-fat cheese and top the baguettes with grilled shrimp
- Place the Baggett on the grill and close
cover and let cook for approx 5 minutes on low flame.
