Stuff To Do With Cottage Cheese   

Breakfast

Better than bisquick pancakes                               thanks maria

Servings:  1, Calories: 254, Protein: 19, Carbs: 32, 

1/2 cup oatmeal

1/2 cup cottage cheese (Does not have to be blended)

2 egg whites

½ tsp. vanilla extract

dash of cinnamon or pumpkin pie spice

  1.  Put into a blender and make into a batter. 

  2. Cook like regular pancakes and enjoy.  I

  3.  use low sugar jam to put on my pancakes or Atkins brand sugar free, calorie free pancake syrup.  Applesauce is also yummy!

(Servings:  1, Calories: 85, Protein: 12, Carbs: 11, Fat: 0) 

1/2 cup Blended cottage cheese

1 tblsp. fat free sugar free french vanilla jello pudding mix

1/2 tsp vanilla extract (I like the extra vanilla flavor)

1/4 cup blue berries 

  1. Stir the first 3 ingredients in a bowl well. 

  2.  Sit in frig about 5 minutes to let jello set... add blueberries.  This would be yummy if you added crushed up 1 low fat graham cracker.  

 ****You can substitute any fruit, the key is the French vanilla pudding and the extract – that gives it the cheesecake flavor.  I have even used “no sugar added” apple pie filling or “no sugar added” cherry pie filling.

Servings:  1, Calories: 74, Protein: 12, Carbs: 6, Fat: 0)

 1/2 cup Blended cottage cheese

1 tblsp. fat free sugar free chocolate jello pudding mix

1/2 tsp – 1 tsp. decaf INSTANT coffee granules (amount according to taste)

  1.  Stir all ingredients in a bowl well. 

  2.  Sit in frig about 5 minutes to let jello set.  

**********I find it blends better if you use a hand mixer.

                                                                                                  

Banana Pudding Pie                                

Servings:  4, Protein: 17 per slice, Carbs: 20 per slice

 CRUST:
1/2 cup low fat graham cracker crumbs (4 long crackers)
1-2 egg whites

FILLING:

2 cups blended fat free cottage cheese

8 packets of equal

1 box French vanilla sugar free jello pudding mix

1 tsp. vanilla

2 tsp. banana extract

1 scoop vanilla protein powder

1 banana sliced thin

  1. Make a crust using the graham cracker crumbs and egg white and press into the bottom of a 9 inch pie plate or baking dish. 

  2.  Bake at 350 for 10-15 minutes until golden brown.  

  3. Let cool. (I put in freezer for 15 minutes). 

  4. Cream together first 6 ingredients in a blender. 

  5.  Slice banana and layer in the bottom of the pie shell. 

  6.  Pour blended mixture into crust.  

  7. Cool in refrigerator. 

  8.  Top with Fat Free Cool Whip if desired.

Servings:  1, Calories: 110, Protein: 12, Carbs: 15, Fat: 0.5

 1/2 cup Blended cottage cheese

 1/2 cup of canned pumpkin

2 packets of equal

½ tsp. pumpkin pie spice.

  1.  Stir all ingredients in a bowl well.  

  2. Sit in frig about 5 minutes to let jello set.  

***********I find it blends better if you use a hand mixer.  This would be yummy if you added crushed up 1 low fat graham cracker.

Snacks 

 

Makes 10 servings

24 oz. Cottage Cheese

8 oz. FF Cool Whip

8 oz. Crushed Pineapple in its own juice

1 small FF/Sugar Free Jello Mix and chill.  .

½ apple cut up  

OR  ¼ cup sugar free maple syrup

OR  ½ cucumber cut up (I add a little salt)

OR 2 tblsp. Of low sugar blackberry jam
